Based on my understanding, there are some suggestions for you. Again, it is totally up to you. Everyone is unique. No one can really make decisions for you even your parents can't.
Since it is quite hard to get permanent residency in EU, it hurts that you work hard at your best age for a couple of years and can't get the "home" feeling.
Actually, you may submit a PR application to Canada. Canada's economic is strong these years. The job market is fairly good comparing to EU's. It is the only immigration country to accept people that who doesn’t have to work there first. It takes about 1.5 to 2 years to get your PR. Hey, It doesn’t hurt to have a backup plan.
Meanwhile, you decide if you want to come back to China or pursue Postdoc in EU. If you are more academic, you may choose stay in EU and ask your wife come over and get the baby thing settle down. Or tentatively accept the Shanghai offer and try it for 3 month. If everything runs smoothly, then staying in Shanghai. That’s it.
After you get your PR of Canada, you decide to keep it or discard it. It requires staying 2 out of 5 years in Canada to maintain the PR status or after 3 years to get CA citizenship.
